A discussion with my mom about a particularly delicious batch of French onion soup is the inspiration behind this. I wanted in on the oniony fun too, but wasn’t in the mood for soup. I did, however, have a chicken breast in the freezer that needed eating. I also had some swiss cheese hiding in the back of my fridge. And that’s the story of how the French onion chicken sandwich was born.
This is easy, but the onions take a little time to caramelize. However, you do get the bonus of being able to cook everything on one pan. Yay for less stuff to wash! I did, however, deglaze the pan with water a few times while the onions were cooking.
We thoroughly enjoyed this as is, but agreed that if some hot pepper relish found its way onto the sandwich, it might be a good thing. We butterflied…
