It doesn’t get much easier than this. With 6 ingredients (plus salt and pepper to taste), it’s pretty cheap. Not to mention surprisingly filling. And though it looks like its sitting in a fat-rich cream sauce, it’s not. Very sneaky. Very sneaky indeed. Note that this does required roasted garlic, so add about 45 minutes – hour to your prep time if you don’t have it on hand. I used that time to do some laundry/dishes.
Makes: About 8 servings
15 oz ricotta cheese (I used part skim)
1 head roasted garlic
16 oz pasta shells
1 pint cherry tomatoes
1/2 bag baby spinach
Salt and Pepper (to taste)
Grated Parmesan (opt)
