The man and I were feeling some Mexican. And enchiladas seemed like the way to go. It was. These things are amazing! It took a little while (about 1.5 hours total for me), but it was completely worth it. Definitely a repeat recipe!

Makes: 12 enchiladas


1 medium onion

1 teaspoon olive oil

3 cloves garlic (minced)

3 tablespoons chili powder

2 teaspoons cumin

3 teaspoons sugar

15 oz tomato sauce

1 cup water

1 lb chicken breast (boneless, skinless)

8 oz (2 cups) shredded cheddar

Minced cilantro

12 corn tortillas

Salt and pepper (to taste)

How To:

1. Preheat oven to 425.

2. Dice up your onion and mince your garlic. I only had half an onion laying around the house, so you should have twice what is pictured.

3. Heat onion and oil on med-low heat, stirring occasionally until onion has softened (about 8ish minutes).
