I think I will try this in my slow-cooker. I bet it turns out really good.

Cooking and Crafting on a Budget

Serves about 8!


1 lb boneless, skinless chicken breast

19 oz enchilada sauce

Shredded cheese (small pack, whatever is on hand – mozzarella or cheddar work well)

Small flour tortillas

1 small can refried beans

Sour cream (opt)

How To:

1. Cook and shred chicken (I usually cook my chicken by boiling it. It stays moist and is simple to do)

2. Preheat oven to 375 degrees

3. Heat up refried beans in microwave

4. Spray casserole dish with non-stick spray

5. Coat bottom of casserole dish with enchilada sauce

6. Cut tortillas in 1/2 and spread the refried beans on top

7. Place a layer of the tortillas/beans on the bottom, top with some chicken and cheese

8. Repeat layering process until you either run out of ingredients or you have about 2 layers

9. Cover dish w/ aluminum foil and bake for 30 minutes
