I’ve made this recipe for baked “fried” chicken twice now and it is pretty tasty. Granted, it isn’t as good as KFC, despite the author’s claims, but really, what is? Plus KFC is stupid unhealthy and really quite expensive for what you get! The first time I made the chicken, a lot of the coating stayed in the pan. This time, though, I read the comments and followed some other directions. I let the melted butter get REALLY hot — like to the point where it sizzled when I placed the chicken in the pan. I also used a bowl this time to hold the flour, instead of using a bag, and that helped for more even coating.
